Ingredients
  • 1 kg Frozen Corn
  • 2 Celery sticks full length chopped finely
  • 2 Onions chopped finely
  • 1 small Red Capsicum diced finely
  • Place all of the above in a bowl and stir through 2 tablespoons salt let stand for 2 hours then place in colander to drain let it drain well.
  • Then….
  • Into a large saucepan place
  • 2 cups sugar
  • 2 cups white vinegar or cider vinegar,
  • 3 teaspoons dry Mustard Pwd.
  • 2 teaspoons Turmeric
  • ( I added a tiny sprinkle of Cayenne pepper this time ) optional.
