Roast cauliflower soup with black garlic
Ingredients
  • 1.5 to 2 cauliflower into florets
  • Salt and pepper
  • Smoked paprika
  • Lemons zest and lemon juice
  • Thyme
  • Rosemary
  • 3 to 4 potatoes
  • Vegetable stock
  • 1 brown onion
  • 1 to 2 cloves black garlic
Steps
  1. Coat cauliflower and potatoes in salt, pepper, lots of smoked paprika, lemon zest and lemon juice, thyme and rosemary.
  2. Roast on a high heat until cooked through.
  3. Sauté onions and garlic in a large pot.
  4. Add stock to onions and garlic and simmer.
  5. Add roast veges and juices, and black garlic.
  6. Blend and add seasoning to taste.
