Veggie-Stuffed Peppers

  • 2 cups cooked brown or white rice

  • 1 cup chopped tomatoes
  • ½ cup crumbled feta cheese (2 ounces)
  • ¼ cup thinly sliced green onions
  • 2 teaspoons dried Italian seasoning, crushed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • ¼ cup coarsely snipped fresh Italian parsley
  • ¼ cup chopped pitted kalamata olives
  • ¼ cup crumbled feta cheese (1 ounce) (optional)
  • 1 tablespoon lemon zest
  • 1 teaspoon olive oil
  • 2 tablespoons chopped walnuts, toasted
