Succulent Barbacoa Beef (S) P. 108
Ingredients
  • 2.5 lb beef chuck roast (2½ to 3 pounds beef chuck roast, cut into thirds)
  • 1 onion (s) (cut into chunks)
  • 1 chipotle pepper in adobo sauce (1 to 3 chipotle peppers in adobo sauce from a can (using 3 is lovely and spicy, but if you don’t like a whole lot of spice, pull back to 1 or 2 and rinse the sauce off a little)
  • 4 cloves fresh garlic (4 to 6 garlic cloves, minced)
  • 2 Tbsp lime juice (2 to 3 tablespoons lime juice; fresh or bottled)
  • 3 Tbsp apple cider vinegar
  • ¾ cup water (or ¾ cup beef broth)
  • 1 Tbsp cumin (ground cumin)
  • 2 tsp oregano (dried oregano)
  • 1.5 tsp mineral salt
  • 1 tsp black pepper
