Ingredients
  • 2 cups of Cooked Rice, preferably day-old rice
  • 1 cup of Rotisserie Chicken, shredded
  • 2 Tablespoons Vegetable Oil
  • 2 Eggs, beaten
  • ½ cup Yellow Onion, diced
  • 1 tsp Minced Garlic
  • ½ cup of frozen Peas, Corn and Carrots, thawed
  • 2 to 3 tablespoons of Soy Sauce, adjust to taste
  • 2 teaspoons of Sesame oil
  • Salt and Pepper to taste
  • 2 Green Onions, thinly sliced for garnish
  • Optional: 1 teaspoon of minced garlic, ½ teaspoon of ground ginger
