  • 10 to 12g salt (sea salt is ideal)
  • ½ cup (4 ounces or 113g) sharp cheddar (block cheese is best)
  • large mixing bowl
  • straight container with measurements
  • banneton or medium round bowl with a tea towel
  • parchment paper
