Chicken and Andouille Soup
Ingredients
  • 1 pound andouille sausage, halved lengthwise and cut crosswise ¼ inch thick
  • 4 bone-in skinless chicken quarters
  • 1 large yellow onion, diced (about 3 cups)
  • 1 green bell pepper, diced (about 1¾ cups)
  • 4 stalks celery, diced (about 1¼ cups)
  • 4 cloves garlic, minced
  • 3 quarts water
  • ¼ cup chicken bouillon paste
  • 2 bay leaves
  • 2 cups orzo
  • ¼ cup chopped parsley
  • Garnish: celery leaves, hot sauce
