German Potato Salad Swabian Style ('Schwäbischer Kartoffelsalat')
Ingredients
  • 2 pounds (900 g) waxy potatoes
  • 1 tablespoon canola oil
  • 1 teaspoon salt + more to taste
  • 1 large shallot, finely minced
  • 1 cup homemade beef broth
  • 1 teaspoon sugar
  • 3 tablespoons white wine vinegar + more to taste
  • 1 tablespoon dijon mustard
  • black pepper, to taste
  • 2 tablespoons canola oil
  • a handfull of finely minced parsley or chives
