The Smartypants Monday recipes: Making Food Monday
Ingredients
  • Chicken (I used about 2 lbs)
  • 1 onion
  • 1 bell pepper
  • 1 ½ cups of salsa
  • 2 tsp cumin
  • 1 tbsp chili powder
  • 2 tsp salt
  • ½ tsp pepper
  • 6 cups water
  • 6 tsp chicken bouillon powder
  • 1 small can tomato paste (6 to 8 oz)
  • 1 can black beans
  • 2 cups frozen corn kernels (Or 1 can, drained)
  • subheading: Toppings:
  • Tortilla chips
  • (all others are optional, but recommended to add tons of flavor)
  • Sour cream
  • Cheese
  • Jalapeños
  • Cilantro
  • Lime juice
Steps
  1. turn on saute
  2. chop onion,
  3. cut chicken in bite size
  4. add chicken and onion to pot
  5. chop bell pepper, add to pot
  6. add salsa
  7. add seasonings
  8. add tomato paste
  9. add water and bouillon powder
  10. cook on hi for 10 min. let it NPR naturally
  11. add frozen corn kernels
  12. add black beans, rinsed and drained is optional
  13. stir well & serve
