Asian Vegan Red Curry
Ingredients
  • 1 Tbsp Coconut Oil
  • 3 Green Onions (chopped; separate white stalks from tops)
  • 2 Tbsp fresh Ginger (grated)
  • 4 cloves Garlic (minced)
  • 2 Tbsp Red Curry Paste
  • 12 Cherry Tomatoes (halved) or 1 15oz can Diced Tomatoes
  • 1 14oz can Reduced Fat Coconut Milk
  • 1 cup dried brown Lentils (rinsed and drained)
  • 1 15oz can Reduced Sodium Chickpeas (keep juice)
  • ½ cup Water
  • ½ tsp Salt
