Squash, corn, peppers, onion

Ingredients
  • 1 Tbl Olive oil
  • 1 medium sweet onion, sliced into half- or quarter-rounds
  • 1 medium zucchini, sliced into half- or quarter-rounds
  • Kernels from 2 ears fresh sweet corn
  • 1 red bell pepper, sliced to match the onions
  • ΒΌ tsp Salt, preferably smoked
Steps
  1. The trick to this dish is to use super-fresh ingredients, and just barely cook everything. More like warming it through than cooking.
  2. Sautee onion in olive oil until just starting to soften.
  3. Add zucchini and sautee 2 to 3 minutes.
  4. Add remaining ingredients and cook 2 to 3 more minutes, until cooked but still very fresh and crisp.
  5. Serve hot or cold.
