Red Curry Peanut Soup with Sesame Crusted Tofu

  • 1 shallot sliced
  • 1 small yellow onion sliced
  • 4 cloves garlic minced
  • 1 bell pepper cut in bite-sized pieces
  • 3 tablespoons red curry paste
  • 3 cups broth I used vegan chicken broth
  • 1 15-ounce can coconut milk
  • ⅓ cup peanut butter I used unsalted
  • 1 tablespoon low sodium soy sauce or tamari
  • 1 head kale stems removed & chopped
  • 1 lime juiced, plus more for serving
  • 2 tablespoons cilantro chopped, plus more for serving
