Use the fronds for the bottom of the roasting pan when making Pork or Fish.  Serve the braised bulbs as a lovely side dish.

Ingredients
  • 2 to 4 Fennel Bulbs - trimmed, cored and sliced thin ( about ½ bulb per person)
  • 4 tbsp butter, melted over medium high heat
  • Juice of 2 lemons
  • Water
  • Salt and Pepper
  • 1 tbsp chopped parsley.
Steps
  1. Lightly Brown Fennel in melted butter, over medium high heat - about 5 to 8 minutes.
  2. Pour over top the juice of 2 Lemons, 1 cup water and season with a little salt and pepper.  Stir to combine.
  3. Turn the heat down to low (simmer) and simmer the fennel for about 15 to 20 minutes until the Fennel is tender and the liquid is reduced to a nice buttery, lemon sauce.
  4. Finish the dish with a few tbls. chopped parsley.  SERVE
