Low Carb Beef Stew

Ingredients
  • 1 lb. turkey, 99% lean, ground
  • 1 chopped onion
  • 1 large peeled and diced turnip
  • 1 T Tomato paste
  • 2 cloves of minced garlic
  • 2 medium carrots chopped
  • 3 celery stalks diced
  • 1 Butternut Squash, cubed or spiralized
  • 1 yellow squash, cubed
  • mushrooms, sliced
  • 2 tsp dried parsley
  • 1 t oregano
  • 1 tsp basil
  • 2 TBSP apple cider vinegar
  • 1 TBSP Worchestershire Sauce
  • ½ T Fish Sauce
  • 1 to 2 cans Green Beans (no need to drain)
  • 1 quart 100 % fat free chicken broth
  • Sea Salt and pepper as desired
  • V8 juice (about 16 oz)
  • 1 packet Lipton Onion Soup
Steps
  1. Brown meat. Add all ingredients to a slow cooker. Cook on low 6 hrs.

  • 02 to 11-2020
  • 02 to 17-23 so good! Added 2 small potatoes and 1 tsp beef bouillon and left out butternut squash
