Keto Enchiladas with Homemade Tortillas

  • 1 tsp xanthan gum
  • 2 tsp olive oil
  • 1 medium egg
  • 1 tsp water

  • 300g ground beef - cooked
  • 2 cups beef broth
  • 1 cup crushed tomatoes
  • 1 tsp xanthan gum
  • 2 tsp cumin
  • 1 tbsp chilli powder
  • 1 tsp onion powder (or ½ cup chopped onion)
  • 1 tsp minced garlic
  • 2 cups shredded cheddar
  • chopped chilli flakes - to taste
