Anchovy Radicchio Pasta Sauce
Ingredients
  • Half a packet of bucatini
  • 1 head of radicchio or a large head of red chicory, roughly chopped
  • About 8 anchovies in olive oil (including the oil)
  • A few generous handfuls of raw, unsalted walnuts, roasted until golden and crunchy (around 8 mins at 200°C)
  • Half a cup (or less) of panko breadcrumbs, gently fried in olive oil until golden
  • A large knob of parmesan for grating
  • 2 cloves of garlic
  • 1 to 2 lemons
  • A handful of flat-leaf parsley, very finely chopped
  • Salt, pepper, and extra virgin olive oil
