Ingredients
  • 2 lbs ground beef
  • 2 eggs, beaten
  • 1 tsp garlic powder
  • 1 cup almond flour
  • 1 tsp rosemary
  • 1 tsp thyme
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp olive oil
  • 2 cups water
  • Sweet and spicy pepper sauce (for example, Tabasco)

Steps
  1. In a large bowl, combine the ground beef, eggs, garlic powder, almond flour, rosemary, thyme, salt and pepper. Mix well.
  2. Take a cake pan and grease with olive oil. Transfer the meat mixture to the prepared pan, press mixture firmly into pan.
  3. Pour the water into the Instant Pot and insert a steam rack.
  4. Place the pan on the steam rack.  Close and lock the lid. Select the MANUAL setting and set the cooking time for 35 minutes at HIGH pressure.
  5. Once cooking is complete, select CANCEL and let Naturally Release for 10 minutes. Release any remaining steam manually. Uncover the pot.
  6. Transfer the meatloaf to a serving plate. Drizzle the sweet and spice pepper sauce over the top.  If desired, top with green onions or parsley.
