Fried Horse Mackerel (Aji Fry) あじのフライ

Ingredients
  • 6 fillets horse mackerel (butterflied; I got mine frozen from Nijiya Market)
  • ¼ tsp Diamond Crystal kosher salt
  • ¼ cup all-purpose flour (plain flour)
  • 1 large egg (50 g each w/o shell)
  • 1 cup panko (Japanese breadcrumbs)
  • 3 cups neutral oil (or enough for 1 inch, 2.5 cm of oil in the pot; for deep-frying)
