Honey Garlic Chicken and broccoli w/ pip rice (Instant Pot) By: Mary Scott

Ingredients
  • ½ Cup Ketchup
  • ⅓ Cup lite soy sauce
  • ½ to ⅔ Cup honey to your liking. I even added a little brown sugar
  • 1 TBS garlic ( I use kind in a jar)
  • 1 tsp oregano
  • 1 tsp sesame oil ( didn't have any seeds = lazy)
  • ¼ cup water
  • ¾ skin on bone in chicken thighs ( or boneless I like the flavor of bone in)
  • 2 cups any long grain white rice rinsed till water runs clear then add to pip container you will be using with 2 cups water (make less if you like) I did 1:1 ratio
  • Enough broccoli to your liking for your amount of servings (I used frozen and started thawing right away)
  • 1 TBS cornstarch
Steps
  1. Mix first 7 ingredients in instant pot and mix well
  2. Add chicken thighs and turn to coat them
  3. I cooked on HP for 9 minutes then 5 minutes QR
  4. Then I added my pip rice onto a trivit that was tall enough to sit higher than chicken
  5. HP for 6 minutes 10 minute NPR
  6. Remove rice pot and trivit and chicken from sauce
  7. I cover rice pot until ready to serve
  8. Mix cornstarch with a little of the sauce in small bowl then add to sauce in the IP and stir till bubbly and thickened to your liking. You may want to add another round of cornstarch.
  9. Add broccoli last and cook just till done.
  10. Serve broccoli and sauce over chicken thighs with rice
Notes
  • Really needed sesame seeds not oil and next time add more honey and thicken sauce more.
