Taiwanese Popcorn Chicken Vs. American Popcorn Chicken

  • 1 tsp mustard powder
  • ½ tsp black pepper
  • 2 egg whites
  • 2 cups Panko
  • 10 sprigs stripped thyme

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine (substitute with dry sherry cooking wine or mirin)

  • 1 tsp white pepper
  • 1 ½ cups THICK sweet potato flour
  • 25 to 30 leaves of fresh basil
