Herby Cucumber Salad with Feta and Chickpeas
Ingredients

  • 2 medium sized English cucumbers, or regular ones (about 4 cups)
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup small diced or crumbled feta cheese
  • ½ small red onion, thinly sliced
  • 1 to 2 cloves garlic, minced
  • ½ cup chopped fresh herbs, I used a combination of parsley, cilantro and mint
  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • Juice of ½ lemon, or more if desired
  • Salt and black pepper, to taste
