Bico (Filipino mochi rice)
Ingredients
  • 5 cups mochi rice (use rice measuring cup)
  • 1 pound dark brown sugar
  • 1 can coconut milk
Steps
  1. Cook rice in IP or rice cooker just as you would regular rice with water measured with rice cup.
  2. After rice is cooked, scoop rice into large bowl.
  3. On stove, melt dark brown sugar in coconut milk. Does not need to come to boil but melt sugar completely.
  4. Pour sugar mixture over cooked mochi rice and coat rice evenly, breaking up clumps.
  5. Lightly spray 9x13 pan with oil. Dump rice mixture into pan and bake at 350 for 30 mins, uncovered.
  6. After baking, lay piece of foil over pan and cool completely.
  7. Cut with plastic knife into 1 in squares and place pieces in paper muffin cups to avoid sticking to each other.
