  • 1 cup (152g) corn, fresh preferred; divided*
  • 1 medium (21g to 32g) jalapeño, seeded and diced
  • 2 tablespoons (29g to 32g) pimentos, diced
  • ¼ cup (24g) King Arthur Organic Masa Harina
  • 3 tablespoons (43g) water
  • 1 cup (227g) buttermilk
  • 5 tablespoons (62g) garlic oil
  • 2 large eggs
  • note: About 1 large or 2 medium ears of corn; in a pinch, use canned corn, well-drained, or thawed frozen corn kernels.
