Beef Chili with Kidney Beans

  • 2 tablespoons vegetable oil or 2 tablespoons corn oil
  • 2 medium onions, chopped fine
  • 1 red bell pepper, cut into ½ inch cubes
  • 6 medium garlic cloves, minced
  • 1⁄4 cup chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon cayenne pepper
  • 2 lbs lean ground beef
  • 2 (15 ounce) cans red kidney beans, drained and rinsed
  • 1 (28 ounce) can tomatoes, diced with juice
  • 1 (28 ounce) can tomato puree
  • table salt
  • 2 limes, cut into wedges
