Ingredients
  • 6 qts unsweetened apple cider
  • 10 lbs apples, washed and quartered
  • 4 lbs sugar
  • 2 T ground allspice
  • 2 T ground cloves
  • 3 T ground cinnamon
Steps
  1. Boil the cider for 20 minutes. Put the apples into the kettle with the cider and cook until the apples are very tender. Press through a sieve to remove the skins and seeds.
  2. Add the sugar and spices to the pulp. Cook until as thick as desired (a soft paste); stirring frequently to prevent burning.
  3. Pour into crocks or glass jars.
