Ground Beef and Barley Soup

I'm a home cook from South Australia, who enjoys experimenting with all sorts of recipes and cuisines. This community is awesome! :)

500g ground beef

1 cup onion, diced

1 cup carrot, diced

1 cup celery, diced

2 tablespoons garlic, chopped

1 teaspoon thyme, chopped (or ½ teaspoon dried thyme)

½ teaspoon rosemary, chopped (or ¼ teaspoon dried rosemary)

2 teaspoons smoked paprika

2 tablespoons tomato paste

6 cups beef liquid stock (or broth)

1 400g can diced tomatoes

1 cup pearl barley (rice for gluten-free)

2 bay leaves

1 tablespoon balsamic vinegar

1 tablespoon Worcestershire sauce

1 teaspoon fish sauce (or soy sauce)

salt and pepper to taste

1 tablespoon parsley, chopped (optional)
