Ingredients

  • 1 cup fideo or mini shell pasta
  • 1 cup yellow onion, chopped
  • ½ teaspoon garlic powder
  • 1 (15 oz.) can diced tomatoes
  • 2 russet potatoes, peeled and chopped into 1" cubes (about 1.5 pounds)
  • 2 carrots, sliced ½" thick (1 cup)
  • 2 celery ribs, sliced (1 cup)
  • 4 cups low-sodium chicken broth (or use beef broth)
  • 2 cups water
  • 1 teaspoon Sazon
  • 1 tablespoon Caldo de Tomate
  • ½ teaspoon ground cumin
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 large zucchini, cut lengthwise & sliced ½'' thick (or use Mexican squash)
  • ½ cup peas
  • ½ cup cilantro
