British-Style Beans On Toast

  • 1 gallon (3.8L) water
  • ¼ cup ( 34 g) kosher salt, plus more to taste
  • 2 tablespoons ( 30 ml) vegetable oil
  • 1 medium onion, finely chopped (about 1 cup; 160 g)
  • 2 large cloves garlic, finely chopped (about 1 tablespoon; 9 g)
  • 6 cups (1.4L)  homemade or  store-bought  low-sodium chicken broth
  • 2 ½ cups ( 590 ml) tomato purée
  • 3 tablespoons ( 42 g) brown sugar
  • 3 tablespoons ( 45 ml) molasses
  • 3 tablespoons ( 45 ml) Worcestershire sauce
  • 3 tablespoons ( 45 ml) apple cider vinegar
  • 2 tablespoons ( 33 g) tomato paste
  • 3 bay leaves
  • Freshly ground black pepper
  • 8 slices sourdough bread
  • Chopped fresh parsley to garnish, optional
