Pressure Cooker Thai Green Chicken Curry
Ingredients
  • 1 tablespoon vegetable oil
  • 1 medium onion, peeled and sliced thin
  • 3 cloves garlic, crushed
  • ½ inch piece of ginger, peeled and crushed
  • Cream from the top of a 13.5-ounce can coconut milk
  • ½ cup green curry paste (a whole 4-ounce can)
  • 3 pounds boneless skinless chicken thighs, cut into 2-inch by ½-inch strips
  • 1 teaspoon Diamond Crystal kosher salt or ¾ teaspoon fine sea salt
  • The rest of the 13.5-ounce can coconut milk
  • 1 cup chicken stock or water
  • 1 tablespoon fish sauce (plus more to taste)
  • 1 tablespoon soy sauce (plus more to taste)
  • 1 tablespoon brown sugar (plus more to taste)
  • Juice of 1 lime
  • 12 ounces green beans, trimmed and cut into 2-inch pieces
