Slow Cooker Buffalo Chicken Chowder
Ingredients
  • 4 ½ cups (about 2 large) potatoes, peeled and cubed
  • 1 lb boneless, skinless chicken, cubed
  • ½ onion, roughly chopped
  • 1 cup (about 3 stalks) celery, chopped
  • ½ tsp celery seed
  • ¼ tsp salt
  • ½ tsp pepper, divided
  • ⅛ tsp ground thyme
  • ½ tsp red pepper flakes
  • ¼ cup all-purpose flour
  • 2 cups half-and-half
  • ⅔ cups low-sodium chicken broth
  • ⅓ cup + 1 Tbsp buffalo sauce (a 0-calorie variety - there’s lots!)
  • 3 oz blue cheese crumbles, for topping
  • 5 celery stalks, cut in half, for serving
