Ingredients
  • 1 small red beet, peeled and roughly chopped
  • ¼ cup plus 3 Tbsp. red wine vinegar
  • 2½ Tbsp. granulated sugar
  • 1½ Tbsp. kosher salt
  • 5 medium shallots, thinly sliced
  • 4 English cucumbers, sliced into half-moons
  • 12 oz. cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • ¼ cup extra-virgin olive oil
  • 2 Tbsp. ranch dressing mix (from 1 [1-oz.] envelope)
  • 1 tsp. black pepper
