Ingredients
- 400g GF plain flour (I’ve tried a bunch of different flours and find they all work well, so I just use the cheapest supermarket blend I can find.
- 12g xanthan gum
- 1g salt
- 4 eggs (200g)
- 15g oil (olive oil for pasta, neutral oil for noodles)
- 3 to 4 tbs hot water
- For noodles, add 1 tsp of lye water. If you can’t find lye water, you can leave it out (it adds a subtle but delicious chewiness to your noodles though). There’s also a way to substitute by baking bi-carb soda. If you’d like to know how to do this, let me know.
