Italian Sheet Pan Chicken Thighs

2 medium zucchini, sliced into ½” half moons

1 medium eggplant, sliced into ½” thick pieces and cut into 1 to 2” pieces

10 ounces grape tomatoes, whole

½ cup shaved parmesan cheese

Italian flat leaf parsley
