  • 1 head iceberg lettuce, finely chopped
  • 6 persian cucumbers, finely chopped
  • 1 avocado, finely chopped
  • 1 chicken breast, finely chopped
  • 3 tomatoes, finely chopped
  • ⅓ cup pepperoncinis, finely chopped
  • 1 (15 ½ ounce) can garbanzo beans, rinsed and well-drained
  • note: cup mozzarella cheese, shredded (didn't add this time, but I recommend it!)

  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 1 garlic, finely chopped
  • 1 teaspoon dijon
  • salt and pepper to taste
