Instant Pot Sambar (Indian Split Pigeon Pea and Vegetable Soup)
Ingredients
  • 1 cup split pigeon peas toor dal, soaked for 1 hour
  • 1 tablespoon oil of choice
  • ½ teaspoon black mustard seeds
  • ¼ teaspoon fenugreek seeds methi
  • 15 curry leaves
  • 1 teaspoon minced garlic or garlic paste
  • 1 teaspoon minced ginger or ginger paste

  • 2 teaspoons coriander powder
  • 2 teaspoons salt adjust to taste
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne
  • ¼ teaspoon roasted cumin powder*
  • ⅛ teaspoon hing optional
  • 4 cups water
  • 3 cups chopped mixed vegetables* see notes below
  • 1 tomato chopped
  • ½ onion chopped into chunks
  • 1 teaspoon sugar or jaggery to taste
  • 1 teaspoon tamarind paste
