Seeded Sourdough Bread
Ingredients
  • 500g (4 cups) organic bread flour
  • 375g (scant 1 ⅔ cup) water for autolyse
  • 80g (⅓ heaping cup) leaven
  • 100g (scant ½ cup) water to soak seeds in (this is added to the dough without straining)
  • 30g (3 Tbsp) poppy seeds
  • 30g (3 Tbsp) chia seeds
  • 25g (3 Tbsp) toasted sesame seeds
  • 9g (1.5 tsp) salt
  • ~10g (~1 Tbsp) each of additional poppy, chia, and sesame seeds to decorate the top of the bread
