Snapper Acqua Pazza or Fish in Crazy Water
Ingredients
  • 2 whole frying-pan snapper or other firm white fish (about 800 g in total), cleaned and scaled
  • 2 tablespoons coconut oil or other good-quality fat
  • 10 garlic cloves, roasted and peeled
  • 1 long red chilli, deseeded and finely sliced
  • 250 g cherry tomatoes, cut in half
  • 25 Ligurian olives�
  • sea salt and freshly ground black pepper�
  • 300 ml sparkling mineral water
  • 1 large handful of basil leaves
  • lemon wedges, to serve
