Ingredients

  • 2 to 4 pounds of skinless chicken thighs (bone-in or out is fine. Can use breasts)
  • Kosher salt, to season chicken
  • Black pepper, to season chicken

  • 2 tbsp (¼ stick) salted butter
  • 2 tbsp vegetable oil
  • 1 medium Spanish or yellow onion, diced
  • 1 tbsp crushed garlic
  • ½ tbsp chili powder
  • ½ tbsp ground cumin
  • ½ tsp ground cinnamon
  • ½ tsp oregano
  • subheading: Stage 3:
  • ½ cup chicken broth (½ cup of water + ½ tsp of Chicken Better Than Bouillon)
  • 8 oz can tomato sauce
  • 10 oz can Ro-Tel
  • subheading: Stage 4:
  • ½ cup semisweet chocolate chips/morsels
  • 1 tbsp smooth peanut butter (I used natural, but regular is fine too)
  • 1 tbsp cornstarch + 1 tbsp of water, to form slurry

  • Sesame seeds, optional topping
  • Cotija cheese, optional topping
