Thai Chicken
Ingredients
  • ½ cup soy sauce
  • ½ cup water
  • 8 cloves garlic, minced
  • 1 tbsp ginger root, minced
  • ½ to 1 tbsp sriracha
  • 2 lbs skinless chicken thighs
  • 1 tbsp sesame oil
  • 1 tbsp brown sweetener
  • 1 onion, sliced
  • ½ cup water
  • 4 tbsp crunchy peanut butter
  • 2 tbsp green onions, chopped
Steps
  1. In a large bowl, combine the soy sauce, water, garlic, ginger and sriracha.
  2. Mix well and place chicken in the bowl, turning to coat evenly.
  3. Cover and marinate in the refrigerator for at least one hour.
  4. Heat the sesame oil in a Dutch oven over medium high heat.
  5. Add the brown sweetener, stirring until dissolved.
  6. Add the onion and sauté for 5 minutes.
  7. Add the chicken parts and sauté for 5 minutes, turning to brown evenly.
  8. Pour in marinade, add the water and bring to a boil.
  9. Reduce heat to low and simmer for 15 to 20 minutes.
  10. Add the peanut butter, stirring well, and simmer for 10 more minutes.
  11. Transfer chicken to a serving platter, pour sauce over, and garnish with the chives.
