Indian style fried flat bread with cumin and tumeric

Ingredients
  • 6 cups flour
  • 4 ½ tsp of yeast
  • 1 cups water (90 degrees)
  • 1 cup of yogurt
  • 2 tsp sugar
  • 3 tsp salt
  • 4 ½ tbsp vegetable oil
  • 2 ½ tsp of cumin seeds
  • 1 tsp of turmeric
  • 5 tbsp of lemon juice
  • oil for frying
Steps
  1. 1.In a medium bowl combine 90 degree water, yeast, sugar. Let sit until foam appears on the top. (about 20 minutes).
  2. 2. In the bowl of a stand up mixer, combine the yeast mixture with cumin seed, turmeric, salad oil, and 3 cups of flour and salt. With the whip attachment, beat for 10 minutes.
  3. 3. Clean and remove the whip attachment. Add the remaining 3 cups of flour.
  4. 4. With the dough hook attachment in place, slowly pulse the mixer on and off until the flour is incorporated.
  5. 5. Continue kneading on medium speed for 10 to 12 minutes or until the dough is smooth and no longer clings to the sides of the mixer. If you need to add more flour, do so 1 tablespoon at a time until the dough is no longer sticking to the sides. ( should have texture of a pizza dough)
  6. 6. Transfer the dough to a large, oiled bowl and cover with plastic wrap. Place in a warm location and allow to rise for one hour or until doubled in size.
  7. 7. Punch down dough and allow to rise a second time.
  8. 8. After the second rise the dough is ready to be divided and rolled.
  9. 9. Cut the dough into 4 pieces and roll each dough on parchment paper to ½ cm thickness
  10. 10. Cut the dough in 3 inch triangles with pizza cutter.
  11. 11. Preheat the oil in wok to medium high. Oil should be at least 1 ½ deep. ( in pam's black wok on stove it's 9)
  12. 12. Test how hot the oil is by frying a small piece of dough ( should immediately float to the top and start frying straight away). Open the fried dough to see if it is cooked inside and adjust accordingly. ( if the oil is too hot it will burn the outer layer and be raw inside. Each batch should take approximately 2 to 3 minutes. Flip them half way. Tear one of them to ensure it is cooked all the way thru.
