Lentil Loaf with Date Glaze
Nice Easter or Holiday Main Dish for Plant Based or Vegans
Ingredients
  • 1 cup onion finely chopped
  • 1 celery stalk finely chopped
  • 1 carrot finely chopped
  • 3 to 4 garlic cloves minced
  • ½ cup green/brown lentils, rinsed & drained
  • ¾ cup water
  • 1 ½ cups rolled oats
  •  
  • 2 TAB tomato paste**
  • 3 TAB nutritional yeast
  • 2 TAB golden flax seed meal - ground
  •  
  • 2 TAB balsamic vinegar
  • 2 ½ tsp Italian Seasoning
  •

  • ¼ cup sun dried tomatoes - no oil if none, use 1 more TAB tomato paste**
  •  
  • ½ teaspoon Table Tasty Salt Substitute
  • ¼ tsp smoked paprika
  •

  • 2 tablespoons Tomato paste
  • 1 TAB Balsamic Vinegar - a sweet one
  • 1 TAB date paste
