Homemade Vegetarian Soy Chorizo
Ingredients
  • ½ package firm tofu, about 1 cup
  • 1 ½ cup Textured Vegetable Protein (TVP)
  • 1 cup low-sodium vegetable broth
  • ¼ cup diced tomatoes with juice
  • 1 small yellow onion, very finely diced
  • 1 tsp smoked paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp oregano
  • ⅛ tsp cumin
  • ¼ tsp thyme
  • ⅛ tsp ground allspice
  • ¼ tsp marjoram
  • ⅛ tsp cinnamon powder
  • ¼ tsp xanthan gum
  • ½ tsp soy lecithin
  • ¼ tsp cayenne powder, to taste
  • ¼ red chili powder, to taste
  • 1 red ancho chile, roasted, seeded, finely diced
  • 1 (6-ounce) can tomato paste
  • 3 Tbs white vinegar
  • 1 ½ tsp salt
  • ½ tsp black peppercorns, freshly ground
  • 2 cloves garlic, finely minced
  • 1 shallot, finely chopped
  • 4 Tbs canola oil
