Easy One Pot Rice and Beans (Budget-Friendly)
Ingredients
  • 12 ounces frozen onion and bell pepper strips (any size package from 10 to 14 ounces will work)
  • 1 tablespoon minced garlic
  • 1 teaspoon cumin
  • 14.5 ounces diced tomatoes with green chilies (1 can)
  • 2 cups brown rice (uncooked)
  • 4 cups broth (vegetable or chicken)
  • 15 ounces black beans (1 can, drained and rinsed)
  • 3 tablespoons chopped cilantro (optional)
