Ingredients
- BASE
- 120g butter, softened
- 150g flour
- 50g brown sugar
- 50g dessicated coconut
- CARAMEL FILLING
- 160g water
- 200g brown sugar
- 200g full cream milk powder
- 240g butter, softened (not spreadable butter)
- 125g golden syrup
- CHOCOLATE TOP
- 200g Cadbury milk cooking chocolate, whole block, or more to taste
- 1 tsp grapeseed/coconut oil or similar, optional -- may prevent chocolate from cracking when cutting
Steps
- subheading: To make base:
- Line rectangular pan with baking paper and preheat oven to 180C fan-forced.
- Melt butter, 2 min/50C/Speed 2.
- Once butter is melted, add flour, sugar, and coconut. Mix for 10 seconds/reverse/speed 3. Scrape down sides and repeat if required.
- Press into tin and bake 10 to 12 minutes at 180C. If it looks undercooked, cook for a further 2 to 3 minutes until lightly golden.
- subheading: To make caramel:
- Add water, brown sugar, milk powder, butter, and golden syrup into Thermomix bowl. Cook 22 minutes/90C/Speed 4.
- While still hot, pour over base and smooth over. Bake in oven for 15 at 180C or until bubbly and browned. Set aside to cool.
- subheading: To make chocolate top:
- Wash and dry Thermomix bowl.
- Put chocolate in bowl and grate for 6 to 8 seconds. Add oil, if using, and melt for 2mins30sec/50C/Speed 2. Pour over caramel and smooth.
