Quinoa Shrimp Fried "Rice"
Ingredients
  • 1 cup quinoa
  • 6 tablespoons vegetable oil
  • 1 small Japanese eggplant (about 6 ounces), halved lengthwise and sliced crosswise into ½-inch-thick pieces
  • 2 cloves garlic, minced
  • 1 small carrot, cut into thin matchsticks
  • One 1-inch piece fresh ginger, peeled and minced
  • 1 bunch scallions, sliced (white and green parts kept separate)
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon Asian fish sauce
  • 1 pound small shrimp, peeled and deveined
  • 4 large eggs
  • Kosher salt and freshly ground black pepper
