Here Is the Recipe for the Carrot Cake
Ingredients
  • Here is the recipe for the CARROT CAKE
  • 2c all purpose flour
  • 2 teaspoon of baking powder
  • 1-½ teaspoon of baking powder
  • ½ teaspoon salt
  • 2 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 5 large eggs
  • 1-½cup of granulated sugar
  • ½ cup brown sugar
  • ½ cup apple sauce
  • 1 cup of vegetables oil
  • 2 cups of grated carrots( I used box grater)
  • ¾ cup of crushed pineapples that in it own juice, I drained most of he juice off
  • ½ cup of coconut
  • ¾ cup of nuts(walnut or pecans, some people are allergic to walnut)
  • 1-½ teaspoon of vanilla
  • Stir dry ingredients together in a bowl, set aside
  • Whisk eggs in a large bowl. Add in the sugar, continue to whisk until the mixture looks light yellow about a minute. Pouring in a slow steady stream with one hand and with the other add the oil.
  • Stir in the carrots, coconut,applesauce,vanilla,pineapple and nuts until well combined
  • Fold in the dry ingredients, do not over mix.
  • Pour the batter equally into three floured and greased cake pans or you can use cooking spray and line pan with parchment paper.
  • Bake for 30 to 40 minutes or until a toothpick is inserted in the center and it comes out clean. Cool them on a cooling rack for 10 minutes. Run a knife around the edge and turn out on rack to cool completely. Remove the the parchment paper. Place on a cake plate and frost with cream cheese frosting
  • subheading: CREAM CHEESE FROSTING:
  • 12oz of cream cheese
  • 12 tablespoons of butter unsalted, softened
  • 1 tablespoon of vanilla extract
  • 6 cups of confectioners sugar
