Vegetarian Gravy With Fresh Herbs (Vegan)
This basic vegetarian and vegan gravy recipe uses fresh herbs like sage and parsley to get lots of flavor. You'll need a good gravy to go with a vegetarian or vegan lentil loaf recipe, mashed potatoes, and of course with Tofurky on your vegetarian Thanksgiving!

Ingredients
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • ½ teaspoon fresh parsley (minced)
  • ½ teaspoon fresh sage (minced)
  • ¼ teaspoon thyme
  • ¼ teaspoon black pepper
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons water

  • 2 teaspoons nutritional yeast
Steps
  1. Gather the ingredients.
  2. Bring the vegetable broth to a simmer in a medium pot or large skillet.
  3. Add the soy sauce and the herbs.
  4. Reduce heat to a simmer, then slowly add the cornstarch and water mixture, stirring constantly to thicken.
  5. Allow to simmer for a few minutes, until thick, and add nutritional yeast if desired.
  6. Serve warm on potatoes, dressing, roast, etc.
