Souvlaki-Marinated Salmon

Ingredients
  • Salmon Fillets
  • Toasted Orzo
  • Kalamata Olives
  • Cherry Tomatoes
  • Persian Cucumber
  • Shallot
  • Feta Cheese
  • Souvlaki Marinade
Steps
  1. Place salmon on paper towels and pat dry.
  2. Slice tomatoes in half.
  3. Slice Persian cucumber lengthwise in half, then into thin half moons.
  4. Slice shallots in half, then slice into thin half moons.
  5. In a mixing bowl, toss together toasted orzo, kalamata olives, cucumbers, tomatoes, shallots, feta cheese, and half of the souvlaki marinade.  Season to taste with salt and pepper.
  6. Using non-stick on medium heat, add cooking oil and when hot, add salmon (skin down).  Cook for 3 min, then flip and cook 2 to 3 min more.
  7. Turn off the heat, pour remaining souvlaki marinade over the salmon.
