Gazpacho is a cold soup that comes from Spain - specifically the hilly Andalusian region in southern Spain that borders Portugal. Gazpacho traditionally has tomatoes, bread, olive oil, and vinegar - as well as other fresh herbs, vegetables, and spices that create a savory, fresh, and chilly soup. It’s best eaten when you are looking for soup on a hot summer’s day - since it is an uncooked soup and naturally served cold!
Ingredients
  • 5 tomatoes, roughly chopped (~5 to 6 cups of chopped tomatoes)
  • 1 medium sized cucumber, peeled and chopped (~1 ½ cups)
  • ¼ cup red onion, chopped
  • 2 cups tomato juice
  • 2 Tablespoons olive oil
  • 1 Tablespoon fresh basil, plus more for garnishing
  • 2 teaspoons white wine vinegar
  • 2 teaspoons chile sauce
  • 2 teaspoons lime juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon dried oregano
  • ¼ teaspoon granulated sugar
  • ¼ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper
  • Optional garnishes: additional fresh basil, croutons
