Creamy Mexican Corn and Bean Soup
Ingredients

  • ½ cup green pepper seeded and diced

  • 1 jalapeno seeded and diced
  • 1 clove garlic chopped
  • 2 ½ cups chicken stock
  • 1 cup heavy cream
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • ¼ tsp. ground red pepper
  • salt and pepper to taste
  • ¼ lb cheddar cheese grate this to make 1 cup of shredded cheese
  • 2 tablespoons chopped cilantro
